How is honey made?

Honey is a by-product of flower nectar. Bees collect nectar from flowers and bring it to the hive. The nectar contains approximately 70 percent of water.

During the process of “ripening of the honey” bees dry the nectar, fanning it with their wings, until most of the water evaporates.

Honey contains less than 18.6 percent water and is so thick that no microbes can grow in it.

Is all honey the same?

There are about 320 different varieties with flavour, colour and smell, depending on the sources of plants visited by the honey bee.

No, almost all un-pasteurized honey will crystallize as it ages. It doesn’t change the properties of honey.
